Only milking 15 cows it's very hard for a dairy farm to operate. Operating expenses, overhead costs, it's extremely difficult. So we needed to value-add on-farm. So we looked at many different options and products that we could start on our farm and cheese was it. Scott den Hann Steacy went to Vermont to the Institute of Artisan Cheese. Whenever she came back she said, look, this is really cool. We've got all these small herds down there that are doing on-farm cheese. It's completely different, but at the same time, why couldn't we bring that here? Steacy den Hann Through our research stage and processing in our business planning, we kind of looked at what other kind of cheeses were made in Ontario. So.... We looked at kind of what was out there and sort of what was lacking in that spread of cheese. And a cream cheese style was what we thought we could bring to the table.
